Moog Ani Kobichi Koshimbir (Sprouted green gram cabbage salad)

Serves - 2

Ingredients:

Ø  Cabbage — 100g
Ø  Whole green gram ( moong)- 50 g
Ø  Curd -60 g
Ø  Oil- 1 tsp
Ø  Sugar -1tsp
Ø  Green Chilli- 1
Ø  Mustard seeds- a pinch
Ø  asafoetida (Hing) –a pinch
Ø  Salt – To taste

Method:
1.    Soak moong overnight, drain the water and sprout the whole moong.
2.    Wash and chop cabbage finely. Add it to sprouted moong.
3.    Heat oil in a small pan. Add slit green chillies, mustard seeds and asafoetida. Let it sputter.
4.    Pour it over cabbage moong mixture. Add curd, salt and sugar and mix well.

What does it give you?
ü  Moong is good source of dietary fibre (16.7%) and protein (24%).Dietary helps you in healthy digestion process.
ü  Sprouting increases the vitamin C content of the pulses. Almost 17-20mg vitamin C is formed in 100g of pulse. Deficiency of vitamin C leads to gingivitis, delayed wound healing etc.
