Tomatochi Koshimbir (Tomato Salad)

Serves - 2

Ingredients:
Ø  Tomatoes — 200 g
Ø  Curd / plain yogurt (well beaten) — 300 g
Ø  Green chillies (chopped) —  1
Ø  Roasted peanuts (crushed) — 1 tbsp
Ø  Sugar to taste
Ø  Salt to taste
Ø  Coriander (cilantro) to garnish
Method:
1.    Chop tomatoes after washing.
2.    Whisk curd along with salt and sugar. Add Chopped tomatoes, green chillies and crushed peanuts to it.
3.    Mix together, serve garnished with coriander leaves.
What does it give you?
ü  Tomatoes are major source of Lycopene. Lycopene is a potent antioxidant which has shown inverse relationship with incidences of certain cancers and heart diseases.
ü  Curd is a good source of calcium. Curd also provides an acidic medium which increases the bioavailability of calcium.
